I know I've been slacking on the dinner posts :P The good news is, I stayed true to the no meat for the most part...I cheated a bit on Friday night...I did cook vegetarian (delicious delicious mac & cheese that I failed to capture :P) but we were at a housewarming and i had a bit of ham...it didn't even cross my mind not to eat it, but I suppose I could have..oh well, I just need to remember to keep that in mind...I also ate Chipotle on Sunday night...poo.
Anyway, for the meat dish last week, I made lamb chops with tzaziki sauce & orzo pasta salad:

I seasoned the lamb with salt & pepper & cooked it in a skillet with a bit of olive oil. As for the Tzaziki, I bought it at Whole Foods ;) For the pasta, I sliced up some Zuchini & Yellow Squash & snap peas, then cooked the pasta. About 2 minutes or so before the pasta was to be ready I dropped in the veggies and let it cook the additional few minutes. Once drained, I tossed the pasta + veggies with a bit of olive oil, salt, pepper, parmesan & lemon juice. This "salad" is served warm but is also yummy at room temperature...
Now, last night I made butternut squash ravioli in a sage butter sauce with a Caesar side salad. Well, "made" is a strong word...I bought the ravioli & boiled it and then heated up the butter til just brown & added sage leaves. It did turn out to be super yummy though. Definately worth the kind of pricey ravioli (about $5 for 2 servings - 6 ravioli a piece).

This week has been so far so good...hope I can make it the rest of the week!
